Mael's Yassa chicken (Senegalese recipe)

Marinate a jointed chicken (or six legs) in the juice of four lemons, some OO, S&P, and three large finely sliced onions overnight in a cool place.

BBQ the bird bits (or griddlepan them) - blackening allowed.

Chuck em in a pot and add the marinade. Simmer till done.

Servir avec du ris et des haricots verts.
